Every Saturday, we have activities for kids and mothers here in our house. Today, my sis taught them how to make Leche Flan made from Squash. Actually, she got the recipe from my Mom’s old, worn out green recipe notebook with a Voltes Five cover.
So, they had a cooking session and the Kalabasa/ Squash Leche Flan really tasted so good! It’s as creamy as the real Leche Flan but it’s more affordable as less eggs and milk are used.
Let me share with you the recipe. This is indeed a cheaper and healthier alternative to the real one.
Ingredients:
1 pc Kalabasa ( Squash) to make 2 cups
2 pcs Eggs
1/4 cup white sugar
1 can condensed milk ( big)
1 tbsp. brown sugar for syrup
lemon rind
Procedure:
Peel the squash, cook in boiling water and mash.
Beat the eggs and combine with condensed milk and sugar. Put in the mashed squash and mix with a hand mixer.

pour in the brown sugar in the baking tin, followed by the mixture. Steam for about 20-30 minutes.
lf you don’t have a hand mixer available, you can also blend the ingredients but the following must be changed.
use: 1 cup of blended squash ( instead of 2)
beat: 4 eggs instead of 2
Try out this very easy recipe as a healthier alternative to the fatty and very sweet leche flan. Who knows, once we substitute our favorite recipes with healthier ( and not to mention cheaper) alternatives, we won’t be gaining so much weight to the point of taking weight loss pills.
